Christmas Tree Chocolate Cupcake – Happy New Year Party Cheap & Easy Recipe

 

For the cupcake:

  1. Preheat oven to 350Β°F. Line muffin tin with paper liners or spray with non-stick cooking spray.
  2. In the bowl of a stand mixer or a large bowl with a hand mixer, add the cake and pudding mixes, sour cream, oil, eggs, vanilla and water. Mix on medium speed for about 2 minutes until all ingredients are well combined and the batter is smooth. Stir in the Andes Crème de Menthe baking chips.
  3. Using a large scoop distribute the batter between 24 muffin wells; about 3 tablespoons of batter per well.
  4. Bake in preheated oven for 18-23 minutes or until the tops of the cakes spring back when lightly touched. Allow cupcakes to cool inside muffin tins for about 10 minutes.
  5. Remove cupcakes from muffin tins and allow to fully cool on a wire rack. Once cupcakes are cool, prepare your frosting.

For the Christmas Tree

  1. If necessary, slice the tops off of the cupcakes to create a flat surface. Slather a small portion of the frosting on the cupcakes to create a base atop which to position the sugar cone tree.
  2. Stir the food coloring into the remaining frosting, adding more food coloring as necessary to achieve your desired green color.
  3. Apply a thin layer of frosting on the exteriors of the sugar cones. Transfer the remaining frosting to a pastry bag fitted with the star-shaped pastry tip.
  4. Place the sugar cones atop the cupcakes then pipe leaves onto the trees. Garnish with the edible sprinkles and dust with powdered sugar.

Kelly’s Notes:

  • 12 cups of frosting is equivalent to eight 16-ounce cans of store-bought frosting.
  • Depending on the consistency of your frosting, you can refrigerate the frosting prior to piping to ensure it retains its shape once piped onto the cones.
  • The sugar cones can be decorated and stored (not on top of the cupcakes) for 1 day in an airtight container in the fridge. Frost the cupcakes and top them with trees right before serving.
